4 Fall Treats

Autumn always motivates me to bake warm meals and desserts. I love having a Fall-scented candle on and hot coffee nearby as I roll out my cookie dough. Honestly, #justgirlythings. Here are a few recipes I love pulling out every year! 
4 Ingredient Caramel
(perfect for apple dipping!)

-1/4 cup butter, 
-1/4 cup heavy cream
-1/2 cup brown sugar 

DIRECTIONS
Combine all ingredients in a saucepan and heat on medium high, constantly stirring. Cook until it starts to boil, and keep stirring for 2 minutes. Remove from heat and cool slightly. 
Makes enough for 2-3 apples to be dipped.

Cinnamon Stewed Apples
(Basically apple pie without crust!)
(this is a single serving = 1 apple)


-Orchard apple (peeled opt.)
-1 tsp cinnamon 
-1 tbsp white sugar 
-2 tbsp butter 
(All measurements are guesstimates- I just go by taste) 

DIRECTIONS
Chop apple into bite sized pieces. Combine all ingredients into saucepan and stir often until apples are soft and cinnamon, sugar and butter are sticky and coated. Best served with whipped cream.

Maple Sugar Cookies
(recipe made 48 cookies when I used a mini pumpkin cutter)


-1.5 cups flour
-1 tsp baking powder
-1/4 tsp salt
-1/2 cup butter (softened)
-1/2 cup light brown sugar
-1 egg
-1/2 tsp maple extract
-1/4 tsp vanilla
-1/4 tsp almond extract

FOR THE ICING:
-1/2 cup powdered sugar 
-2 tbsp maple syrup 

DIRECTIONS 
Preheat the oven to 350° and cover 2 baking sheets with parchment paper. In a large bowl, sift the flour, baking powder, and salt. Set aside. In a separate bowl, cream the butter and sugar together. Add the egg, vanilla and extracts and stir until combined. Finally, add the flour mixture 1 cup at a time. On a floured surface, roll the dough a 1/4 inch thick and cut with your cookie. They won’t spread when baking, so you can lay them closer to each other on the sheet. Bake for 8 minutes until the edges are set and browning. 
For the icing: Combine the 2 ingredients and spread on cookies once they’ve cooled. The icing gets really thick and sticky! For the stems, I melted a couple Tbsp of chocolate chips and painted them one the top of the cookie with a spoon. 

Apple Coffee Cake


CRUMB TOPPING
-3 tbsp sugar
-3 tbsp brown sugar
-1/2 cup and 3 tbsp flour
-5 tbsp melted butter

BREAD INGREDIENTS 
-2.5 cups flour 
-2.5 tsp baking powder
-1 tsp salt
-2 tsp cinnamon 
-1.5 cup melted butter
-3/4 cup sugar 
-2 eggs 
-1 cup milk
-1.5 tsp vanilla 
1 cup peeled and chopped apples 

GLAZE
-1 cup powdered sugar 
-1 tbsp milk 
-1 tbsp maple syrup

DIRECTIONS
Preheat the oven to 350° and grease a 9x5 loaf pan. 
Make the crumb topping by combining the sugar, brown sugar, and flour. Drizzle the butter in the bowl and stir until combined and clumped together. Set aside. 
In a large bowl, whisk together flour, baking powder, salt and cinnamon. Set aside. In a smaller bowl, whisk the eggs, sugar, and melted butter until well combined. Add this wet mixture to the dry mixture  and stir until just combined. Do not over mix. Fold in the chopped apples. 
Scoop the batter into the loaf pan, smoothing the top. Sprinkle on the crumb topping and lightly press into the batter. 
Bake for 45-55 minutes until toothpick inserted comes out clean. Allow the loaf to completely cool and make the glaze. In a small bowl, whisk together the powdered sugar, milk, and syrup until it’s smooth and drizzle over the top of the cooled bread. Let the glaze set and then carefully remove the loaf from the pan and slice.
